The Smashroom (Portobello Smash Burger)

Mushrooms aren’t just meaty and satisfying — they’re one of the few plant-based sources of vitamin D.
When paired with aged white cheddar, you create a nutrient trifecta that supports whole-body health:

Ingredients

1 lb portobello mushrooms (4 large caps), cleaned and stems trimmed

2 tbsp neutral oil
-
2 cloves garlic, minced
-
1 tbsp white miso paste
-
1 tsp smoked paprika
-
1 tbsp chili crisp (optional, for spice)
-
½ tsp freshly ground black pepper
-
1 tbsp balsamic vinegar
-
¼ cup grated aged white cheddar cheese (or vegan cheese substitute)
Method
1. Make the Marinade
In a small bowl, combine oil, garlic, miso, smoked paprika, chili crisp (if using), and pepper to form a paste.
2. Prep the Mushrooms
Score a shallow “X” across the top of each cap.
Brush the paste over both sides to evenly coat.
Marinate for at least 2 hours — 8 hours or overnight develops deeper umami flavour.

3. Roast

Oven: Preheat to 425°F (220°C). Place mushrooms stem side down on a parchment-lined baking tray. Roast for 20 minutes, until very soft and juicy.

Air Fryer: Preheat to 400°F (200°C) and roast for 10 minutes, until tender.

Smash & Broil
Remove from heat, flip the mushrooms, and gently smash them flat using the bottom of a clean glass, pan or rolling pin.
Preheat oven or air fryer to high broil.
With mushrooms stem side up, drizzle with balsamic vinegar and sprinkle with aged white cheddar.
Broil for 2–3 minutes, until the edges crisp and the cheese melts golden.
Serve
Serve immediately on a toasted bun or crisp lettuce wrap with your favorite toppings — caramelized onions, avocado, or roasted red pepper aioli.
